Characteristics
Founded 1752 in Nihonmatsu, Fukushima — castle town of the Niwa clan.
The world's foremost master of kimoto, the original Edo-era brewing method:
weeks of patient hand-mashing to cultivate wild lactic bacteria.
Used at the official banquet for the 2008 G8 Hokkaido Summit.
Recognized as a Sake Brewery Visit Award World Best.
Sake that drinks like Burgundy and ages like one too.
