Characteristics
Founded 1922 in Minamiuonuma, Niigata —
snow country, where winters bury houses to the second floor.
Brewed entirely with snowmelt that filters through Mt. Hakkai —
a sacred peak in the Echigo-Sanzan range, climbed by yamabushi monks for centuries.
Tanrei karakuchi: light, crisp, dry — restraint as a virtue.
