Hakutsuru

— The White Crane of Nada —
Audio Guide
Hakutsuru — One Minute of Stillness
Three centuries on the same Kobe coast
0:00−:−−
Drink with food, never on its own. Nada sake was built for the table.
Soul of the Kura
Nada is half a kilometre wide and ten kilometres long.
Inside that strip lives the largest concentration
of working sake breweries in Japan.

A single underground spring rises here, and only here:
Miyamizu — the famously hard, mineral-rich water
that gives Nada sake its bold, swordlike, "otoko-zake" character.

Hakutsuru has drawn from it since 1743.
The crane on the bottle has not changed.
Characteristics
Founded 1743 in Nada Goko — the "Five Villages of Nada" —
Japan's single largest sake-brewing district, on Kobe's eastern coast.
Brewed with the rare hard mineral water known as Miyamizu,
a single underground source that produces the famously bold Nada style.
Hakutsuru's free brewery museum holds Edo-era pressing tools
designated as Important Cultural Properties of Japan.
Reasons to Visit
Tasting Etiquette
  1. Try kanzake (warmed sake) at 45°C.
Nada sake was traditionally drunk warm — the dryness rounds out beautifully.
  2. Pair with strong food, not delicate.
Bold sake answers grilled meat, soy-glazed eel, and pickled cabbage.
  3. Visit the museum first.
It frames the bottle. Drinking after viewing is the local order.
  4. Drink among the kura, not after.
Nada bars pour all eight breweries side by side — comparison is the point.
  5. Walk between breweries.
All within ten minutes' walk; the train station serves both ends of the strip.

Izanagi Jingu

伊 弉 諾 神 宮

The first-rank shrine of ancient Awaji,
enshrining Izanagi-no-Mikoto, father of all the kami of Japan.
Awaji is the island the creation myth says was born first —
the very ground from which Japan itself unfolded.
Cross the Akashi Strait Bridge from Kobe; the shrine is one hour away.
