Soul of the Kura
In 1659, the Kano family hung the chrysanthemum crest
over the door of a small Nada brewery.
It has not come down.

For 365 years, this kura has practised kimoto —
the slow, hand-mashed method that wild yeasts demand —
at industrial scale.

The kimoto Junmai sold by the case in Tokyo izakaya
is the same recipe written down
during the early Edo period.
Characteristics
Founded 1659 in Nada-Goko by the Kano family.
Master of kimoto brewing on a national scale —
almost no other brewery practises this slow method at this volume.
Brewed with hard Miyamizu water.
Dry, clean, deeply structured —
the everyday kimoto Junmai is a Tokyo izakaya standard.
