Asahi Shuzo has brewed in Nagaoka since 1830.
But it was the 1985 launch of "Kubota"
that taught modern Japan to drink dry beside dinner.
Characteristics
Founded 1830 in Nagaoka, Niigata.
The flagship "Kubota" line was launched in 1985 to revive interest
in handcrafted premium sake during the era of cheap mass production.
Tanrei karakuchi: light, dry, restrained — the most copied style in modern sake.
Today the best-selling premium sake in Japan,
and a default at sushi counters from Osaka to New York.

Tasting Etiquette
  1. Chill before pouring.
    Tanrei karakuchi shows best at 8–12°C.
  2. Drink with sashimi or sushi.
    Kubota was engineered for raw fish — that is its highest purpose.
  3. Climb the line slowly: Senjyu → Hyakuju → Manju.
    Each is the same family, different polish — taste the staircase upward.
  4. Refill slowly, never quickly.
    Tanrei sake punishes haste with dehydration.
  5. Drink with friends, not alone.
    Niigata sake culture is built around the shared table.
