Niwa no Uguisu — One Minute of Stillness
A bush warbler's song from the Chikugo River
0:00−:−−
Cool gently. Soft Kyushu sake fades above 14°C.
Soul of the Kura
Some morning in the 1830s,
a bush warbler — uguisu —
landed on a stone in the brewery garden
and sang.

The owner named the new bottle after that bird.
The label still bears him.

For 190 years, the brewery has stayed close to that gentleness:
soft, fragrant, generous sake.
The favourite of Tokyo izakaya owners who hate to compete with their food.
Characteristics
Founded 1832 by the Yamaguchi family in Kurume, southern Fukuoka.
Brewed with underground water from the Chikugo River basin.
Soft, faintly floral, modern in style —
a brewery beloved by Tokyo izakaya for not competing with the food.
The "Special Edition" line has won repeated IWC silver and gold years.
One of Kyushu's most fashionable younger brand names.
Reasons to Visit
Tasting Etiquette
  1. Cool to 12°C, in a small wine glass.
Soft Kyushu sake closes above 14°C.
  2. Pair with white-flesh fish or mild chicken.
The brewery was built around Hakata-style cuisine.
  3. Try the Special Edition winter release.
A small allocation that ships only December–February.
  4. Carry a bottle to a Tokyo izakaya.
Many of them stock it — but bringing your own is always welcomed.
  5. Drink in good company.
A Kyushu sake culture rule: the bottle is always shared.
