Sakamoto Ryōma — the loyalist samurai
who wrote Japan's first modern constitution
on a wooden ship in 1867 —
drank from this brewery before he sailed.

The flagship still bears the name of his eight-point plan.
Characteristics
Founded 1603 in Sakawa, the castle town of the Yamauchi clan.
The official sake of the Tosa domain throughout the Edo period.
Drunk by Sakamoto Ryōma — the brewery's flagship is named
"Senchu Hassaku," after his Eight-Point Plan drafted at sea.
Bone-dry, sharp, swordlike — a sake built for unsweetened katsuo bonito,
salt-cured fish, and fierce Pacific winters.

    Tosa sake reveals its dryness fully at 18–20°C.
  2. Pair with strongly salted food.
    The brewery's identity is built around Tosa cuisine — they belong together.
  3. Honour Tosa drinking culture.
    In Kochi, refilling another's cup before it empties is a kindness, not pressure.
  4. Try the bekuhai cup at least once.
    A traditional Tosa cup with no flat base — once filled, must be drained.
  5. Finish standing, never sitting alone.
    Sake here is for company, not solitude.
